Peanut Butter Cup Cheesecake

CRUST

2-3 cups chocolate cookie crumbs
1 cup roasted unsalted peanuts, coarsely chopped
1/2 cup unsalted butter, melted
4 tbs firmly packed golden brown sugar
pinch of salt

FILLING

4 8-oz. packages cream cheese, room temperature
1 1/2 cups firmly packed golden brown sugar
1/2 cup creamy peanut butter
1 tsp vanilla extract
4 large eggs
1/4 cup whipping cream
2 1/2 cups Reese's Peanut Butter Cups
cut into 3/4 inch pieces

TOPPING

1 12 oz. bag semi sweet chocolate chips
4 tbs unsalted butter
1/4 cup water

For Crust:
Position rack in center of oven and preheat to 350 degrees F. Butter 9-inch springform pan. Mix chocolate cookie crumbs, chopped peanuts, melted butter, brown sugar and pinch of salt in bowl until well combined. Press mixture evenly onto bottom and sides of pan. Bake until set, about 8 minutes. Set aside to cool. Reduce oven to 325.

For Filling:
Using electric mixer, beat cream cheese and brown sugar in large bowl until smooth. Add peanut butter and vanilla extract and beat just until blended. Add eggs 1 at a time, beating just until blended after each addition. Add whipping cream and beat until smooth. Stir in peanut butter cup pieces. Pour filling into crust. Bake until sides of cake are set, but center still moves slightly, about 55 min. Cool cake in pan.

For Topping:
Place all ingredients in microwaveable bowl and heat at 50% power for 30 seconds. Stir. Continue to heat at 10 second intervals until chocolate is barely melted. DO NOT OVERHEAT. Stir until smooth and pour over top of cheesecake, spreading chocolate to edges.

Cover and refrigerate overnight

Turtle Cheesecake

المقادير والطريقة :

Crust:

1 1/4 C. chocolate wafer cookie crumbs

1/4 C. sugar

1/4 C. melted butter

Mix crust ingredients and pat into a 9 or 10 inch spring-form pan. Bake 10 minutes at 350°F. As soon as it comes from the oven sprinkle 1 C. chocolate chips over bottom. Put back in oven for 3 minutes. Take a pastry brush and spread chocolate chips over bottom crust. Sprinkle 1/2 C. of toasted pecans over chocolate. Place the pan in the refrigerator while you make the filling.

Filling:

24 oz. cream cheese

1 1/2 C. sugar

3 eggs

1/2 C. sour cream

12 oz. melted chocolate

1 t. vanilla

1/2 lb. turtle candy chopped

Mix cream cheese and sugar together, blending well. Add eggs one at a time. Add sour cream, vanilla, then add melted chocolate. Add the chopped candy. Pour filling on crust.

Heat oven and add 8 C. boiling water to a pan and place on bottom oven shelf. This will provide moisture.

Bake at 400°F. for 15 minutes, turn oven down to 225°F. and bake another 50 minutes, or until center is set. Turn oven off and let cheesecake set with oven door cracked 1 hour. Chill.

Serve with a Carmel or Chocolate Sauce. (or both)

Carmel Sauce

3 cups sugar

2 cups cold water

Juice of 1 lemon

2 cups heavy cream

To make the caramel sauce:

In a medium, acid-resistant saucepan, combine the sugar, water and lemon juice. Bring to a simmer over high heat and cook until the caramel forms, about 310°F. on a candy thermometer.

Remove the skillet from the heat. Slowly whisk in the heavy cream. Return to the heat and cook until thickened and dense, about 10 minutes. Remove from the heat and allow to cool.

Caution: Do not taste anytime during the cooking as the caramel is very hot and will burn you.

Filling:

1 1/2 tsp baking powder
1/3 cup soft butter
2 egg whites
1 tsp vanilla
2 tbsp lemon zest
2 dry pints fresh marionberries

Topping
1 tbsp arrowroot
1 1/2 cups low fat yogurt
1 egg
1/2 cup granulated sugar

Preheat oven to 350 degrees. Sprinkle the arrowroot over the rest of the topping ingredients and whisk together until smooth. Set aside.


Combine the filling ingredients (except the berries) in the work bowl of a food processor and pulse until smooth. Pour into the bottom of a 10" cheesecake or springform pan. Sprinkle with berries, and pour the topping over the top. Bake for 1 hour, or until a toothpick comes out clean. Let cool 20 minutes before serving. Serves 12.
