Triple Chocolate Raspberry

المقادير والطريقة :

Bottom Crust

1 ½ cups chocolate wafer crumbs (Oreo)

1/3 cup melted butter or margarine

Middle Filling

2 pkg. 8 oz. Softened cream cheese

1-cup brown sugar

3 eggs room temperature

1 ½ tsp. Vanilla

6 or 8 oz. Squares (your choice) semi-sweet chocolate with a spoonful of butter melted & cooled

1-cup plain yogurt

Chocolate Glaze Top

4 or 6 oz. Squares semi-sweet chocolate

2 Tbsp. Melted butter or margarine

1 Tbsp. Corn syrup

½ tsp. Vanilla

Raspberry Coulis

Fresh raspberries, fine sugar, lemon juice

Whir together and squeeze through a sieve or cheesecloth to remove seeds.

Drizzle on plate and place slice of cheesecake on top.

This recipe is for an 8” Spring-form pan. Pre-heat oven to 325° Place a pan of water on the bottom rack.

** You can use a larger pan and adjust recipe accordingly.

i.e. 2 ½ cups crumbs with 1/3 to ½ cup of butter… filling remains the same just becomes a thinner presentation. Then use 6 or 7 oz. Chocolate squares with 2 Tbsp. Corn syrup, 2 ½ -3 Tbsp Butter

Be creative and use Brandy or Frangelico, Cointreau instead of vanilla??

A) Mix crumbs with butter until blended. Press firmly onto bottom of well-greased 8’ spring form; Place in pre-heated oven for no more than 10 minutes. Take out to cool while preparing the filling.

B) In food processor or with electric beaters…

Beat cream cheese and sugar until smooth.

Beat in eggs and vanilla.

Stir in melted chocolate and yogurt until well blended.

Pour onto prepared crust. Bang on the counter a few times to remove any air bubbles that may form while pouring into crust.

C) Over double boiler or in microwave set at 50% power

(Watch this carefully so it doesn’t burn-stir often while melting)

Chocolate, corn syrup, butter, vanilla

Stir until melted.

Cool slightly before spreading on cake.

Place cheesecake on the middle rack of pre-heated oven. Bake 60 minutes or until edges of cake pull away slightly from sides of pan. (DO NOT OPEN OVEN DOOR DURING BAKING)

Turn heat off and let cake cool in the oven with the door ajar. Run a thin sharp blade between cake and pan. Cool in fridge overnight.

Next morning make glaze and pour over top, spreading with the back of a spoon to create design… Chill several. Cut with sharp blade placed frequently in a glass of hot water.

Serve with Raspberry Coulis or not…
