2 Cups of basmati rice
1000 gram chicken cut in four pieces and washed and dried
four pieces of Cardamoms
four pieces of Cloves
two medium size sticks of Cinnamon
Dry lime soaked in worm water for 30 minutes
Salt to taste
One large onion
Green chilli optional
Wash rice until water runs clear and soake in water with teaspoon of vinegar for 30 minuts or little more.
Peal and julienne onion
Fry onion in little oil until slightly golden
Add chicken and cardamoms, cloves, cinnamon, dry lime and salt and fry for few more minutes.
Add five cups of hot water and let simmer for 30 minutes, at this point chicken should be cocked and ready to be broiled
Filter the juice and measure two cups and a half of the juice and bring to boill.
Add rice and let boills on medium high until juice disappears form the surface of the rice, turn heat very low cover the pot with aluminum foil and let steams for 45 minutes.
Before rice is done place the ckicken under the broiler and broil unil chicken skin turns golden crisp.
Pour the rice in a round plate and place broiled chicken on top and serve
